I just wanted to make sure this matches up and no one has had any problems, i have a 2003 Civic EX coupe, it has 15x6.5 rims stock w/ 185/65R15 tires, if i get 16" rims (16X7 4-100 40S
) and put 205/55R16 tires on it, i would have no problems, right? no speedo probs, no rubbing, no nothing...right?

Correct, you will have no problems at all. Your speedometer will read just a little too slow (probably 1 or 2 MPH slower at 100MPH) but thats it, I am almost positive that is the tire size Honda put on their Factory Perfomance Civics too.
You also have the correct bolt pattern 4X100, and offset +40, so you will be okay.
