Overheating randomly

2000 Honda Civic DX, keeps overheating randomly when I'm driving usually when I'm actually in motion. Sometimes when I'm sitting still. I can tell the thermostat isn't opening at times. I make sure the thermostat opens and let's hear come through the vents before I leave. but when I have my heat turned on and I mess with the vent settings sometimes it will stop overheating. I replaced my thermostat three times and still it gets stuck. At times it's open and it will still start overheating. I have a OEM Honda thermostat and I do have the blue coolant from the Honda dealership. I replaced the fan sensor switch the temperature gauge temperature switch. I replaced the radiator when I wrecked into a hitch not going very fast just drifted forward into a truck and replaced the short radiator hose when it busted on the interstate. It could be my water pump it could be my heater core. I'm not leaking any fluid into the passenger floorboard. I replace the radiator cap I'm just dumbfounded as to what it could be but it does cool down when I switch back and forth the heater settings. Also it keeps emptying the coolant out of the reservoir tank and doesn't go back into it. I was having to empty some of the reservoir tank because it would be too full now I'm having to fill up the reservoir tank because he keeps emptying out and not going back into it. I also see blue coolant dried and fried on top of the radiator and random parts near it like it's coming out of somewhere but I'm not sure where. Here recently when I turn my heater on and I'm driving and it's overheating and I messed the settings when I have the circulating button on defrost and the setting set to feet and defrost it'll cut off immediately and I have to set the settings back a different way. Meaning the vent air will cut off all together itself. It someone could help me at all. I would greatly appreciate it. Thank you
