What degree thermostat

Friends. Why are there three different options for thermostats? There is a 170, there is a 180, and there is a 192 degree thermostat. Why the varying need for a different one if the engine is supposed to run at a consistent operating temperature? Does it depend on elevation?

Another question. At what temperature is the IACV supposed to run? I think I may have a cooler thermostat currently in it, and it's probably the reason for frequent P0505 codes.

I just buy the oem one, it's not very expensive.

This doesn't answer my question. Do you say OEM as in buying it directly from the dealer? Even local parts stores describe a 170°, a 180°, and a 192° as all OEM.
