Temp. gauge oscillating...WTF?!?!

Temp. gauge oscillating...WTF?!?!
I own a 01 EX.
After a long ride, my coolant overflow reservoir fills up enough for coolant to come out the top. Then my temperature gauge starts freaking up + down.
I changed my radiator cap and thermostat already. Didn't help.
No coolant in the oil or oil in the coolant. At idle when started cold it doesn't do it, even after 20 minutes of idle and revving...
Should I look at the radiator or do you think it's the head gasket? Has anyone else had that problem? What was your fix?
