Iridium or another type of Spark Plug

Hey all I have a 2003 honda civic i've got a full cold air intake and just recently got an exhaust. i put a lot of miles on my car right now after almost a year i've got 30,000 miles and before i put the exhaust on i started to see a decreas in my gas mileage and a lack of power i've done some general tuneup stuff and checked everything i never go past 3000 miles on oil i use a synthetic oil and i have tried to find spark plugs to replace them but i can't find anyone except the dealer who sells double platnum i know i can get iridium online pretty cheap but i don't know if i can run irridium on a stock ignition.
also i have a problem of when i push my car harder my exhaust manifold gets red hot even in the cold ny winter. nothing else in my car get's overly hot just the exhaust manifold temp gauge doesn't even show a prob. could this be due to the exhaust intake or something else like spark plugs. i'm stumped with this.
