Hello,
I replaced the AC and alternator belts with OEM replacements but i'm getting a little bit of squeal when i first start the car. I'm thinking it just needs some tension adjustments.
To make adjustments to the A/C / Alternator belt, will i need to remove the Power Steering Pump or are there easier access points to it since the nuts are way down there?
I just don't want to do more work than i have to.

If you think a good mechanic is expensive, try hiring a bad one

Belt for alternator isn't tight enough. Adjust tighter, then drive it and see if noise is gone. If noise is still present, adjust the same belt a little tighter.......repeat until it's tight enough to not squeal
If you're old school, these need to be a lot tighter than the old V belts

To reach the tension adjusters for that belt will i need to remove the power steering each time? I just recall having to unmount it when i changed the belts and was a little bit of a hassle.

No, you do not have to remove power steering pump. You may want to jack up car, remove driver side tire and plastic shield so you can see whats going on down there.
