I was driving around yesterday and there were a few deep puddles-- I'm almost sure they would've splashed against my imaginary intercooler if my car was lower.
My question is what happens if water hits the intercooler? Also, what if the intercooler somehow gets submerged for a few seconds? Thanks ahead of time.

it wouldnt do anything... the intercooler is completely sealed.... it isnt like a filter... it doesnt suck air.... air just passes through it on its way from the turbo to the throttle body.....
