Squeek Squeek...
Everytime I let off my brakes I hear a squeek coming from the rear of my car. Obviously it has something to do with my rear brake system but I'm wondering if anyone can pin point the issue.
Would it be the springs in my rear drums or something to do with the ebrake/brake cable?

try making the sound only using your ebrake. Pull it up with the button held down and then push it back down... Still the same noise happening??
Mine did the same, till I took the drum off and put it back on and it went away. Something funny I guess.

interesting... I think I hear the noise when I pull my ebrake up too. Once it gets warmer I plan on changing my rear shoes so hopefully the noise will go away then.

There are contact points on the brake shoes that the shoe rubs on the backing plate, they get dry after time and can make noise, usually clean the brakes off then re-lube the contact points ONLY!
