So I've had this reoccurring overheating problem with my 2005 civic ex and I've replaced the thermostat both fan relays because they wasnt kicking on and my engine coolant temperature sensor and it still keeps trying to overheat on me. I was wondering if anyone else has had this problem and would be able to give me some advice.

Probably the headgasket. Should test to comfirm.

Yeah I have 217,816 miles on my 05 ex. And right when it overheats. I'm going to assume it's the head gasket.

There's no reason to assume, it's fairly easy to tell if that's the issue. If coolant keeps going into the overflow tank meanwhile the radiator is low that points to head gasket. The link GolNat posted will show you how to test.
