ok.... well here goes
for 5spd correct me if im wrong
1st gear 0-40mph medium acceleration
2nd 40-60 high
3rd 60-80 medium high
4th 80-120 high
5th 120-? (im gussing 135) low
so when you are cruising within those ranges... you can shift to any of those gears...
so if you are going 60.. you can downshift to third... and be ok
now trying to accelerate in 5th is a bad idea.. cause you really cant pick up speed as fast as going in 4th...
hope this helps in playing tag on the freeway...

I made a spread sheet in excell that calcualtes out the speeds at a given rpm, and I got pretty similar values for speeds in the given gears.

ive got a two door 2001 ex and ive gone about 130 slightly downhill on the highway, and i think 4th just goes to about 110, but i my be wrong cause i havent done that for awhile

55 - 80 3rd
80 - 105 4th
105 - ?? 5th
But I don't think that my fifth will go up to much over 120. I know I'm at 4000 when I am doing 80mph. Is that about right for everyone?

Rep Power: 0 I dunno about pulling 40 in 1st and 60 in 2nd. When I run to 60, I hit reds. But, I'm always in the upper 3rd gear when I actually hit the 60 mark. I think in 2nd, I shift somewhere like 50-55. I think 1st tops out at mid-30's. But then again, I haven't riden up my gears like that in a while. I shift under 3k cuz I can't afford gas.

Rep Power: 0 Well obviously I don't drive like that everywhere I go. I just mean that when I put my foot down occasionally, that's about where the redline is in the different gears. Driving around the beltway in DC you need to accelerate off the onramps with some speed sometimes or else you will get run over. I hit it and I dont hit red till about 33-37 or 38
2nd is between 35-about 55-63
3rd I run till around 82 or 83 i think, maybe a few more
4th can land me at about 100-110
and fifth is like the last 23 or 24.. I havent taken my car over 105 since I toped it at 134.34 (.34 is a guess as the actually position of the pointer was just a hair over 134)
I might be a few mph off, but probably no more than about 4, I run it enough to have a good feel about the speed. (This is in the context of racing, actual pull as far as just highway driving... I pulled past an mdx just after about 105 on the way home last saturday night, yes again I was running him, but from a rolling start say 65-75 mph.)

there's a site that shows the gear ratio, and the respective top mph you can reach in that certain gear...
for a ex 5spd,
2nd - 58 or 59 mph (can't remember which, but I've downshift before at 55 and its almost at redline)
3rd - 83 mph...
the rest I cant remember. lol.
