first off, the MTX Thunder8000 12"s are only available with dual 4-ohm voice coils, so your assumption was correct...
there are two ways to wire a pair of dual 4-ohm voice coil subs... like this:

and like this:

the MTX Thunder801D amp is rated for 400x1 @ 4-ohms and 800X1 @ 2 ohms...
SO..... if you were to connect your subs to the amp as shown in the first diagram, you will get a 1-ohm load, which will fry your amp... and if you wire them as in the second diagram, you will get a 4-ohm load, which will be fine for your amp, but you will be splitting 400 watts between 2 subs (200 watts each), and your performance will suffer...
where you go from here is up to you; if you want to keep the subs, you should find an amp that puts out 800x1 @ 1 ohm, and wire your subs as in the first diagram above... but if you are particularly fond of your current amp, then you should get a pair of dual 2-ohm voice coil subs (400 watts each, just like the MTXs, would be best) and wire them up like in the pic below...
