system never sounds the same
Everytime I listen, it sounds different with all the same settings. Some days it's sounds perfect, other days sounds crappy when you turn it up, other days there's no bass...and I think this is why. Would dynamat and temp affect it that much?

yes, dynamat makes a huge difference. at night my system sounds 100 times better than day. When I go to work or school it sounds ok, but when I come back...wow. BTW, I got dynamat Xtreme for front speakers, rears and some in the trunk.
temp and humidity both effect the sound. People on here who live in the country can attest to this. It's been a while for me but i believe on cool/humid days you can hear stuff like cars coming up the road and trains and crap from miles away. And on hot/dry days you can hear the cars till they're almost to your house and cant hear trains at all. Well at least thats how it was at my old house.

It also matter on weather you have your windows up or down. If you have your windows down the speed you are driving will also make a difference. Just about anything and everything can effect the way your system sounds from day to day.
