I have a Phoenix Gold Octane 800W mono blasting 2 12" Cerwin Vega V-MAX at 2 ohms.
My question is, what farad do I want my capacitor to be? 1, 1.5, 2??

okay, but will it be performance hindering if the farad is higher then your rule of thumb?
I wouldn't mind having something big enough to consider future plans, but at the same time i don't want to lose performance.

It won't hurt it to have extra, there won't be a problem with it. The number I supplied is generally all that is necessary, but more won't hurt it. It's not going to contribute to the operation of the amp/speakers either, and generally people get what they need cause it's easier on the wallet. You could always buy another cap, and run two/multiple caps, but it's really up to you as to how you go about it.
