2 10' vs. 1 12"
depends....how much room do have? ported or sealed? are they the same series (same speaker just diff sizes) i had a one 12 system that beat and got beat by a pair of 10s...its all in the install. I prefer one very nice 12 with lots of power.
I have 1 12" sony xplod 1200w sub. I think its perfect, if you dont want people from a far to hear your music. When im inside my car, my bass makes the entire interior shake. You can REALLY feel it hit hard. So, if you want something just for you, i suggest 1 12" would be fine. Plus you save on trunk space.
Just my 2 cents

the only difference would be in how the bass notes sound due to difference in driver size, imo... but ludlam is right theres no better or worse jus depends on your tastes in music and how u set it up personally i love 15's =)

me, i've always run 12's.. i know whiterabbit will always run 15's...
same argument can be put to ported and sealed.
i like a sealed over a ported, others like ported over sealed.
as to loudness, it may be even in the 2, even though the 10's may have more surface area, a 12 usually seems to push out that tiny extra bit.
as to low end extension, teh 12 will have it beat

If your a Rock guy - 10"
If your a Rock and Rap guy - 12"
If your a Rap guy - 15"
No one is "better", they are just more suited at playing different types of music.

mixing sub sizes usually works with a 15 and a 10, a 12 and an 8,
in order to not get cancellations and crappy sound it takes a whole lot of crossover work.
