ect should be the other sensor in the cooling passage. not the fan sensor. i think there are only two sensors. heater core usually needs to be replaced. it has the smallest passages and clogs up first. have you noticed if the car is actually overheating when the temp gauge goes up? like is it abnormally hot under the hood or different smells? cause if the ect is bad, or the temp gauge, you may be getting inaccurate readings.

there are cheap chemical tests at the auto store you can test your coolant with to see if there is exhaust gas in it (headgasket leak)

yes when the car heats up, under the hood gets hot and you can smell it. so its not a sensor issue, it actually is hot. no the overflow is never overfilled, just normal.

did you ever do compression check? cylinder leakdown test? coolant system exhaust check, look at the plugs for white deposits? does it misfire when cold started?

dont have a leak down tester but the compression test was 180psi on all 4.

doesnt misfire, in fact runs great all the time, just gets up there in temp.

I just checked the hoses after shutdown, both were hot.

I just got off the highway and its so weird how it will get 3/4 of the way up the temp gage while cruising and then when i get off and am at a light, it cools down to normal. Its like ***-backwards

any engine codes? ive heard the EGR valve cause cause overheating internally if its not working, if you even have one.

I think you should take it to Honda to get looked at. By the sounds of it everything is normal besides overheating on the highway. All of this makes no sense.
