A local salvage yard has a room full of Honda OEM rims that look to be in good condition, but I've heard that a rim may be out-of-round (bent) and you won't know until its balanced? Any ideas on how to tell if they are good?

Hmmm, you should be able to tell just by looking for any warps/dents/scratches, but put one on CARPETED ground and roll it to see if it rolls straight.

If you do a quick visual inspection like "dark civic" said, thats bout the best u can do. Chances are most of them are ok

yeah the most important things to look for are cracks and bends. that's pretty much the main problems that would affect much.
