What is so good about putting on a tire size of 205/60R15 rather than say stockish 195/60R15 roughly? I think stock is really something like 185/65, but i'm trying to compare buying tires between the 205 and the 195. Would a 65 be better, than a 60? How would getting either one help me any or be a dis-advantage? Hope this makes sense.

205, being wider than 195 will offer a few things 195 won't:
1. Better braking (due to more tire being on the ground. Remember, when it comes to stopping it's not just about the braking component but what component is actually touching the ground - the tires!)
2. More traction cornering (again, due to more tire being on the ground)
3. Easier launching off the line (again, due to more tire being on the ground, but you can ruin this advantage if you have a low-profile tire)
To sum it up, wider is better. You cannot go wrong getting a wider tire. I encourage it.
As far as profile goes... here's my experience, I've owned 185/65, 195/60, and now 205/55. 65 profile is the tallest from the side, and since there is more distance from the tire to the wheel, it's offers the least amount of road noise. The more you go down to a lower profile, the more road noise you'll get. This might be the last thing you'll think about if you have a loud exhaust system.
Another benefit is a lower profile tire is better for cornering. The lower, the better. You might even improve gearing/acceleration if your profile is low enough. (A 50 profile will give the most dramatic change on a 15 inch wheel. However, your speedometer will be over 4% off and that might cause some odometer issues. So you don't want to exceed 4%. If you have an EX, the lowest you can safely go is 205/55. The disadvantage would be if you were to hit a bad pothole you risk bending your wheesl!)
Another benefit is appearance. 60 looks better than 65. Low profile = less tire and less of the donut look, but bear in mind that if you also go wider, you'll also slightly increase the overall height of the tire. A 195/65 would look taller than stock, where-as 195/60 would be a bit smaller. 205/60 is taller than 195/60. The profile # is what makes the biggest difference in terms of height.
