I discovered if I sit idle and rev up the RPM's once it gets to about 5k the engine cuts out (does not stall but drops to normal) and goes back down again. What the?? I can't hit my "Vtech" RPM's! Any ideas?
I never see these numbers when on the road cause I don't really speed or go above those RPM's.

May have some clogged injectors since you "never see these numbers when on the road." It is good to hit high RPMs at least occasionally to clean out the carbon and build-up. Try some FP60.
And BTW, it's vtec not vtech. This is vtech:

And also BTW, our vtec's engage around 3k so hopefully you do get into your vtec RPMs.

There may not be a problem at all...since you stated that you have an automatic transmission. Many vehicles have built into the ECU a rev limiter that prevents you from reving above a certain RPM if in neutral or park. I'm not sure if Honda has this feature but I know some Fords do. Some even as low as 3000 RPM max if not in gear.
One way to settle this is to bring it up over 6000 RPM in either first or second gear. If it doesn't cut out then that pretty much confirms the ECU has neutral rev limiting software built in.

FP60 from Lube Control. There are several threads on it in the Fuel, Oil... Forum. But I agree with Axe Man, probably ECU since it's an auto.
