if i change my steering wheel (no air bag ones), will insurance NOT cover when i have an accident no matter if its my fault or not?

depends on the insurance company
but if a cops pull u over with one, then if they are ***** then they will call your insurance company and notice them. (happened to some guy on clubSi)
it is not legal to have aftermarket steering wheel but it's pain in the *** if get caught with it and insurance is another issue to deal with
