Hold on, so you want to just have the Civic sitting around doing you no good while you drop another $30,000 or more on another car? I don't understand. Why not make the Civic a daily driver and only bring out the big guns on the nights and weekends? With that said...
This car might not be my personal choice because it snows where I live, but since you're in Texas... I'd go for the S2000. I think it's the most refined out of the cars you listed. I hate the interiors of all WRXs - they don't feel like $24,000 cars, and especially not $32,000 cars. The EVO is boosted like crazy. I'd rather have my car not come with 19.5lbs of boost from the factory to make 270hp or whatever it is. That doesn't sound right to me. The S2000 has the least hp, but it seems like the most solid car out of the pack. And since your Civic is pretty practical, why not buy a car that you can barely fit a girl and a set of golf clubs in?
Keep in mind that I haven't driven any of these cars though. Maybe the other people should've said if they have or not when they gave you an answer.

The M3 has 333hp and has a power to weight ratio of ~10. The Lancer EVO has 271hp and a power to weight ratio of ~12. I'd put my money on the M3 with 160hp more even though it has to carry an extra 200lbs.
I'd have to go with a S2000
The WRX interior is not worth the money
STI: Just dont like it...
EVO: Like it, but boosts way to much to have that little amount of hp, and the interior is not all that either

I'd also put my money down- that you can't get a new M3 in the price range of those three cars. While for 30k I'd prolly pick a different car, I'd say go with the s2000 over the other 2

If you have another car to drive, then get the S2000. Its priceless. Between the prestige, the looks, the stares you get every day, the handling, and the whopping redline that you will rev every damn chance you get... the car is worth every penny. BUT it can't be driven in snow for crap.
Otherwise, if this will be your only car, get the STi.

The question is, what do you want from a car?
handling? Acceleration? Looks?
First off, the Evo 8 and the Sti will beat the S2000 on the track (Road race)(Assuming all the drivers were of equal skill)
I'm not certain about 1/4 mile because I dont really care about 1/4 mile times.(Do you drive the 1/4 mile to work every day? I thought not.)
I feel that the S2000 looks a whole lot better then both of them.
between the Evo 8 and the Sti, it becomes a question on looks (Nither of them are really that pretty) and Handling (each one takes corners differently) The EVo 8 is more solid, the Sti likes to swing the *** around.
You'd be suprised, the Evo 8 and the Sti may not beat it in the 1\4 mile, but all three are classed A-Stock by the SCCA so on an autocross or road course, they should be right on top of each other.
so whats it gonna be? Get all the Looks from the ladys? (S2000) or be able to fly like the wind rain or shine (Evo 8, STi) and do you like a solid feel when you turn (EVO 8), or do you like having Oversteer being just a throttle lift away? (STi)

Only if the M3 was missing a wheel or something

S2000 no question. Just take a look at this months Car And Driver, the S2000 beat a 350Z, a Boxter and a couple other ones you would'nt expect, go to the store and take a look for yourself.

Ok so far...
Evo- 6
S2000- 7
STi- 2
Okay I want a car that's fast but also looks good. I'm really leaning towards the STi. I like the Evo but it's not really my style. But then again the 7thgen was not my style but I fixed it up and proved myself wrong. ]I really like the S2000 a lot but the only thing holding me back is the 240hp compared to the 271 from the Evo and the 300hp from the STi.

A few of us have touched on the subject of what's practical in a daily driver. Remember folks. . .this is to be the DAILY driver. I say go for something with 4-doors, or don't go with anything. If your Civic is to be the show car, why go for something that's any more glamorous? The EVO and and the STi are both solid choices for a daily, mainly because they handle very well, will go through ANY weather, and have plenty of space to carry the things we tend to carry on a daily basis, and then some.
The S2000, while an EXCELLENT choice for a car, overall, would simply be overkill for daily driveability, and would be one of the worst choices a person could make as a daily driver. (That is, unless you own a truck or SUV for hauling things and people around)
I'm in the exact same boat as you are. My Civic is already a show car, but it's still a daily driver, too. By the end of summer I hope to have found something I can drive, especially in inclement weather, while the Civic remains garaged for the shows and the sunshine. I'm single, live by myself, and I have gregarious plans for a huge garage/house in the next couple of years. As much as I would LOVE any of those cars as a daily, or even a truck for a change, I'm personally looking for something cheap, economical, safe, and relatively thief-deterrent. Something like. . . . well, a Civic.
I know, they still attract thieves but they fit the bill in every other way.
I think the point I'm trying to make is this. . . . if you're going to drop $25,000+ on a new car as a daily and garage the economy car simply because you want to show it, I'd personally have issues with that. Buying something CHEAP and garaging the Civic. . . well, that makes more sense. Otherwise, buy something badass, move whatever universal mods over to that from the Civic that you can, and show the other car while driving the Civic every day.
That's merely what I would do. (Still like your choices of cars, just question the reasoning, is all.)

Dood. . . I'd worry more about finishing college at this point that using those funds on a second car.

Evo-7
S2000-9
STi-2
Ok yeah I'm 18 and I already have my college money. I have money for both and no I'm not rich or anything. My parents are not paying for it either. Money isn't a problem, the major problem to me is deciding the car.

I looked at motor trend and the Evo does the 1/4 mile in 13.08 and that does beat a M3.
