Overheating and revving up and down.

Okay, so my 1995 civic dx sedan with a d16z6 engine swap, i bought it like 4 months ago now, and it ran perfectly fine until a weeks ago. On easter I was driving to go see my son from georgia to savannah, i noticed on 95 it started over heating, so i got it up to my exit because there were no other exits between my location and my exit. I pulled into a gas station and i popped the hood, nothing abnormal, so i thought, minus the fact there was no coolant in the radiator. so i filled it up, and let it cool down, then i said, lets try it again, I get it maybe another mile or 2 down the road and it started over heating again, frustrated, i pulled into walmart because it was the closest place, and it had a gas station. So i pull in, and i pop the hood as fast as possible, and my radiator is cracked. First my thoughts were, oh great, Water pump? But i didn't think so, nothing abnormal about how it sounded or anything. I basically quik-steeled the radiator let it settle, and filled it up again, it seemed to fix the problem for a little bit, because it was fine all the way to my sons house. and on the way back, i had to stop at the same walmart again, and it cracked straight through the quik steel, so basically just so i could try and get it home, i put it on super thick this time. and filled it up again, i drove home, and just before, maybe a mile, before my driveway, it started over heating again, so pissed off, i threw my hood up and noticed the steam pouring out of my overflow tank. SO anyways, that was when it first started, now to my fixing, I changed my radiator, bought a brand new one, i changed my thermostat bought a brand new one, took it for a test drive, seem to run fine to the store, then on the way back, it would over heat when i started going fast, but the heat would drop rapidly when i slowed down to turn. When i make it home, i pop the hood, and towards the back of the engine i see steam, hear air pushing out, and coolant is leaking on the floor. Basically i figured it was fine to drive right down the road to a gas station, not even a half a mile away. So i got in the car, started driving down the road, got to the first stop sign, and noticed the car revving up and down constantly, but only when i hold the clutch in. Honestly, that's all that i can say about my problem, if you have any input for me, i'd appreciate it a lot, i've heard the options it could be either my freeze plugs or my head gasket. Please let me know what you think.

I think it's the headgasket, especially with it steaming out the back of the engine. The only reasons the coolant would get hot enough to boil out is a bad headgasket or waterpump.
