So I'm reading about coilovers with and without pillow mounts. Are they worth it?

Not really, they're nice to have, but nothing special. Most of the JDM coilovers with pretty anodozing include them to make them seem more appealing.

Caster plates are worth it, however.

Since you're posting in the 6th gen section, these do not apply. Those types of mounts are used on MacPherson type suspensions. They allow changes in either camber or caster or both and offer a better mounting position for your suspension. For our cars, we have to buy a new upper control arm to adjust camber and we cannot adjust caster. Well, you could if you have a lot of money...
