Between the O2 sensor just under the header and the harness... tap the black wire. Just make sure the car has been off for a while... it gets kinda toasty down there.

You're not going to have enough wire to run the violet wire all the way to the header, splice another wire into it. And that's the one you need to tap, not the one near the car. For a 2nd gauge I've got an Oil Pressure guage... the DIY didn't survive the move to the new forum.
Here's a few install pics , I don't have any of the sender end because it's a little hard to get up there. I re-routed the idiot light sender port to a T fitting with stainless braided hose where I mounted the Autometer sender and the idiot light. I mounted them on a custom bracket, but I think I'm going to move them to the firewall when I get a chance.
as far as a 3rd... it's up to you... Some people use voltmeters or water temp.

do they make electric oil pressure gauges and not the ones you have to hook up and have oil run though, like one you hook to a wire and tells you the pressure?

I have the Autometer Cobalt series Oil Pressure guage. The only way to detect the pressure is by tapping into the line. But my guage is still electric and not mechanical.
