Re: 03 ex. new head, gasket white smoke what now

Drain the oil. Did you drain all the coolant including removing block's drain bolt (coolant jacket)? If not, there's most likely spill over and some amount of coolant in the oil. As I have been told..there's always some coolant in oil after overheat/head gasket breach but, oil doesn't always turn color.
With the oil drain bolt off pour a new quart of oil in and let drain out.. repeat this twice more. Tighten oil drain bolt, fill oil to correct level and bleed the coolant system per service manual with addition of: Elevate on jack stands to highest point for coolant bleed..climate control on max heat and fan off. Rev engine to 2000-2500 for a minute intermittently to burp bubbles out.

White smoke is not abnormal as long as it isn't a continuous thick cloud that last for more than 5 minutes or more. As long as the mechanical and ignition timing are correct, valves aren't making noise (bent), and engine is not overheating.. let it run for 15 minutes or more and see if white smoke lessens or stops altogether... while performing coolant bleed.
Also, listen and look for the radiator fan to kick on during coolant bleed.

Did you replace the intake and exhaust manifold gaskets during HG replacement?
All cylinders have good compression and within 10% of each other now?

If smoke persist..do a block test and a leak-down test for valves and rings + straight shop air 125 psi for head gasket leak
