T-stat is an inexpensive part, but a lot of shops don't replace it unless you specify that you want them to. If its not the thermostat I'd check the heater core next.

It could be the t-stat or heater core but, usually mysterious disappearing coolant is the headgasket. It's either that or a cracked head or block.
Do a self diagnostic on the heater controls and tell us what code, if any, you have.
