i would change the coolant and oil both completely, by taking the head off, u open up the chambers and the surrounding coolant grooves, with the head off, chances that dust and lots of other things getting in there is quite large

I had my friend look the labor up in his shop manual (Express Lube Labor Guide Online) ... a head R&R on my 2002 Civic EX is 5 hours labor time and they RECOMMEND new gaskets .... most people will tell you you can use the old gaskets if they are still in good shape but new ones are ALWAYS RECOMMENDED .. so yeah, $800 is dead on - at $160/hour!!!!

yea those prices are a little too high for something like that. I have a frined that works at honda and in fact there prices are very competetive to some race shops. Try asking your dealer if they are willing to install it there.

Swapping a head is not that big of an issue. Although I have not swaped a Honda head, I have done other engines. Should only take a couple hours MAX. Just unbolt the old one and all wires.... clean gaskit surface, spray with some gaskit adhesive spray, put on gaskit, put on head and plug in the wires.. Then of course change the fluids.. maybe do it twice if you feel things may have droped in the engine.
