Need feedback on tire width. I plan on getting slipstreams in 15X7, but still have a lot of tread on my falkens. The problem is they are sized 185/65/15. The approved rim width for this size is 5-6.5 inches. Think it will be safe?

Yes its fine. They're a little small but it won't hurt anything, just watch the curbs.
And unless things have changed, 15x7 shitstreams are a tough find.
