A good rule of thumb that I use is I do mine every other wash...sometimes you will have to do it every wash depending on if your engine is really dirty...a cleane engine inside & out is a happy engine....

I'm planning to clean my engine come spring time. What exactly do I need to cover up before I start spraying? I know I need to cover up the top of the battery, but what else ?

I wish I could wash the engine myself, but i don't got a garage, tools.... so I just pay 35 bucks and let the pros do it
I wash my engine compartment every other time I wash the car with the sponge I use to wash the wheels. Regular car wash soap will do. I never cover a darn thing and have never had a problem. Just don't purposely shoot water into the fuse box.
Remember, the engine compartment is exposed to the elements and everything in there sees some moisture. Washing the engine isn't going to hurt anything. Just don't spray water into certain areas. Gently rinse the important stuff. When I say "gently" I am referring to a hose w/o any kind of nozzle on it.

All I do is cover the alternator with a plastic bag, remove my air filter and cover the end of the intake with another bag with an elastic around it to hold it there. As for the battery, I just wipe off the water when I'm done. I don't cover it or anything. And yeah, MBow is right. Low pressure water flow and scrub things yourself. I don't wash my engine at those high power washes. Water from there could get anywhere.

I did it only once so far. I let it run first for a little while to get it warm. Not hot though. Then I sprayed it down with a fine mist. Then I sprayed it with some Simple Green. Then I let it sit. Then I sprayed it off with a little high pressure, but nothing absurd. Then I repeat the process a couple of times. I also used a rag to get into those nooks and crannies to wipe off the grease and grime that was stubborn. I didn't bother covering anything. After I was done with the washing I let it dry for a little while before I started the engine up again. I let the engine get warm and I shut the car off again. Then I wiped everything down with another clean rag to dry off the engine. Then I used some Mother's Back to Black to wipe down all of the plastics. That made them shine nicely. Worked like a charm. Hopefully I can do it again soon.
