Time to winterize

So this will be my first real winter as a driver and I would like to clarify what should be "winterized?" Most winterizing threads are for those freaks who live up north in the deep cold and really don't apply to those of us smart enough to stay in a milder climate. I mean, I just moved from Florida to East Tennessee so the winter won't be bad but will be colder than I (and my car) are used to. So, I have accumulated the following:
1. Check Fluids (coolant, oil, etc.) and change as needed.
2. Replace wipers.
3. Check tire pressure and tread. I will actually be replacing my tires soon.
4. Get one of those ice scraper things.

So what am I missing? I assume the snowfall in East TN is minimal so is the bag of cat litter/sand necessary?

And what about undercoating? I just heard that deicing salts are used so should I look into undercoating?

I am a strong supporter of Rain-X for driving in the rain. Does Rain-X help reduce ice on the windshield since it "repels" moisture?

Any tips or pointers would be appreciated.
