already have aftermarket 15x6.5 w 0 off set but not sure the difference will be if i get 16x8 w 15 or 25+ off set.

It will be 1" bigger in diameter.
1.5" wider
Sit 25mm further away from the center of the wheel.

the offset on my wheels are actually +38mm. 205/50/15 tires. doesn't look bad on my car. will +25mm look better?
