2001 Civic defrost/air conditioning

I recently bought an '01 Civic, my first Honda. When I turn on the defrost the air conditioning comes on. I understand this is normal for a Honda, but none of my other cars have done this. I constantly run the defrost in the winter to keep the windshield defogged and the car interior warm. Running the air conditioning decreases the MPG. Is it possible to disable the defrost from the turning on the air conditioning and how to do it?

Rep Power: 787 And if it's too cold outside, the AC won't even turn on. There's a sensor somewhere that controls this, so the system won't be ruined.
