Of course it should be easy to use. In the real world, people want to use their applications, not learn computers. Hell, 99% of people don't even care enough about computers to play with them and screw them up.
It is infinitely easier to lock down a linux system just based on the fact that 99% of linux apps do not require superuser privliges to run. Try running Office 2k without admin privs. As far as controling everything, chmod/chown are your friends. Setting file permissions are a pain in NT. While I agree that graphical environments compromise security, security updates for many common linux apps are available within hours of a breach being found, and if you can program you can even correct them yourself. With NT, hopefully MS will provide you an update before you are hit.
The example you gave is also faulty. How exactly did you bust into your high school's server? You had su privs. No matter how technically secure a system is...it is vulnerable if bad admins are running it. In your case, the system's faults lie with the idiots running it...and hopefully they lost their jobs after your stunt.
