Here's my problem, I was attempting to drive from Pensacola, FL to Houston, TX and I made it to Mississippi (100 miles) and I noticed the temp gauge started to quickly climb upwards. 90% of those miles were on I-10 doing about 75. I immediately pulled over on the side of the road and let the car cool off. I then proceeded to drive to the next exit to check under the hood. I noticed there was fresh coolant on the radiator cap and in a spray pattern behind the cap on the motor. I waited until the engine cooled off and filled the radiator back with coolant and drove back to Pensacola with no issues. Since then, I have replaced the radiator cap and I put a new motor in the coolant fan (A/C fan was working but coolant fan was not). Since then I haven't driven more than 15 miles at a time just to and from work. Should I check/replace anything else before attempting to make another long distance trip?
Edit: I have taken the car to the mechanic and had them pressure test the coolant system and they said they could find no leaks in the system.

Head gasket.
Look up ezone's links for how to properly pressure test the cylinders to reveal if your 7th-gen's finally needed one. A conventional cooling system pressure test isn't going to reveal a failed gasket on this engine.
If the engine was allowed to overheat just so, you may also need to mill the head to correct a warp. Keep that in mind when paying to fix this problem. New HG with a warped head will fail again in short order.

i just fixed my head gasket myself a little after 200,000KM. same issue as the OP. head was warped got it machined. if your gonna do the head gasket u might as well do a full tune up at the same time (at least that's what i did lol). new plugs, water pump, all belts including timing belt, air filter etc..
